I made this delectable Fresh Strawberry Mousse for a 4th of July BBQ and it is the perfect warm weather dessert! The mousse is light and fluffy and super creamy with the addition of the cream cheese in the mixture.
By reducing down the strawberry juice the mousse has bright intense strawberry flavor. I enhanced the flavor by substituting 3 Tablespoons of the strawberry juice with 3 Tablespoons of Chambord Liqueur. This recipe is a terrific way to showcase fresh summer strawberry in a cool, creamy dessert. Here is how you can make your own.
You can find the entire recipe here. Pick thru the strawberries and find the cutest smallest berries to use as a garnish later. Set aside. Hull and cut the remaining strawberries and pulse in a food processor into medium pieces, 6 to 10 pulses. Transfer berries to a bowl and toss with 1/4 cup sugar and salt. Cover bowl and let stand for 45 minutes, stirring occasionally.
Strain the strawberries thru a fine mesh strainer into a bowl. You should have around 2/3 cup juice. Measure out 3 Tablespoon of juice or substitute 3 Tablespoons Chambord Liqueur and sprinkle gelatin over the liquid to soften for 5 minutes. Place remaining juice in small sauce pan and cook over medium high heat until reduced to around 3 Tablespoons of liquid. This will take around 10 minutes. Add gelatin mixture to reduced juice and stir until gelatin has dissolved. Add the softened cream cheese and whisk until smooth. Transfer to large mixing bowl.
Return strawberries to food processor and process until smooth. Strain puree through fine mesh strainer into medium bowl, pressing on solids. You should have around 1 2/3 cup puree. Discard any solids left in strainer. Add strawberry puree to gelatin mixture and whisk until incorporated.
Using a stand mixer with chilled bowl and whisk, whisk the cream until soft peaks form, add the remaining 1/4 cup sugar and whip until stiff peaks form. Whisk the whipped cream into the strawberry mixture until no white streaks remain. Portion mousse into dessert dishes and chill for at least 4 hours or overnight. Before serving garnish with more whipped cream and reserved berries.
this is another i'd like to try without having to actually do the working of making them. They look DELISH!
