It's strawberry season again and I will be looking for all kinds of recipes to use up as many of these ripe red berries as possible! This uncomplicated and delicious Fresh Strawberry Cake is a perfect ending to a sunny BBQ or picnic. It's easy to bring along and tastes great with a little dollop of whipped cream!
The cake flavor and texture is simple and lets the sweet taste of the strawberries really shine through. Think strawberry shortcakes but without the hassle, everything is in one cake! Get out your fresh berries, here is how you can make your own.

entire recipe here. Preheat the oven to 350 degrees. This recipe calls for a 10" pie plate but I used a
10" spring form pan instead. Make sure to spray your pan with Pam for Baking. Set aside.
In a medium bowl whisk together the flour, baking powder and salt. Set aside. In the bowl of an electric mixer fitted with the paddle attachment cream together 2 cups of the sugar and the butter until light and fluffy (3 minutes). Mix in the egg, milk and vanilla until combined. Slowly add the flour mixture until a batter comes together.
Transfer batter to pan and use an offset spatula to evenly smooth the batter. Top the batter with the halved strawberries being sure to cover and much of the batter as possible. Sprinkle the berries with the remaining 2 Tablespoons of sugar. Bake the cake for 10 minutes at 350 degrees then drop the temperature to 325 and continue to bake for approximately one hour or until the top is golden brown and firm to the touch.
Let cake cool in the pan on a wire rack before cutting into wedges. If you are using the spring form pan, lightly run an offset spatula around the edges of the cake to loosen from the pan and remove the outer ring to let the cake cool completely before cutting into wedges. Serve with whipped cream.
